About this statute

This provision applies to the preparation and storage of ready-to-eat foods containing egg as an ingredient. In food preparation covered by Article 1, egg must be replaced with pasteurized ovoproducts made by authorized companies, unless the food will later receive heat treatment of at least 75°C at the center. Homemade mayonnaise made with ovoproducts must have a finished-product pH of no more than 4.2. Foods for immediate consumption that contain egg or egg product must be kept at a maximum of 8°C until they are consumed. Breaches of this Royal Decree are sanctionable; breaches of Article 2 are treated as serious infringements.
