Government Code § 26.003
If the county judge does not appear and no visiting judge is appointed, the sheriff must adjourn court for three days; if the sheriff does not do it, the constable must; and if the judge is still absent on the fourth day, the sheriff or constable must adjourn court until the next regular term.
